We are often asked for plant-based barbecue ideas. There is actually a lot you can make. A simple classic are zucchini and eggplant slices with a little oil and salt. We also like to grill cobs, stuffed mushrooms (for example with our cashew sour cream) or avocado halves. Marinated vegetable kebabs, sometimes with mushrooms or tofu, are also very tasty.
For the side dishes, there are no limits. One of the side dishes that we especially love for barbecues is Russian Salad. Normally, Russian Salad is made with lots of mayonnaise containing eggs. However, in our recipe we suggest a very authentic and tasty plant-based mayonnaise sauce. It is super quick and easy to prepare. Of course, it is extremely versatile. If you mix it with potatoes, peas and carrots, you get a delicious, satisfying, nutritious and high-protein Russian Salad. Its mild taste fits perfectly with the rich roast flavors from the grill.

First, you need to soak the dried peas in cold water for one hour. Then, cook them for 45 min. Add salt only at the end. Alternatively, you can use steamed fresh peas or canned peas.

Peel the carrots and cut them into small cubes.

Peel the potatoes and cut them the same way you cut the carrots.

Steam the carrots and the potatoes with a little water and 1 tsp salt in a large pot. Use high heat at the beginning. As soon as the water boils, decrease to low heat and cover the pot.

Now you can prepare the plant-based mayonnaise. It’s really very easy. Just blend all the ingredients with 100 ml water and a pinch of salt. If you don’t have a food processor, just use your hand blender.

Carefully mix the cooked carrots and potatoes with the peas.

Add the sauce. Your Russian Salad is ready! If you want to eat it cold, place it into the fridge for a while.

PLANT-BASED MAYONNAISE SAUCE
plant-based (vegan), soy-free, lactose-free, gluten-free, raw

Ingredients:
- 100 g/3.5 oz cashews
- 70 g/2.5 oz rapeseed oil
- 2 tsp apple vinegar
- 2 tsp white wine vinegar
Directions:
- Blend all the ingredients with 100 ml water and a pinch of salt in a food processor or with a hand blender.
RUSSIAN SALAD
plant-based (vegan), soy-free, lactose-free, gluten-free,

Preparation time:
Level of difficulty: very easy
Ingredients:
- 300 g/10.6 oz dried peas (halved and peeled)
- 700 g/24.7 oz potatoes
- 400 g/14.1 oz carrots
Directions:
- Soak the peas for one hour in cold water. Then, cook them for 45 min in a large pot. Add salt at the end.
- Peel the carrots and the potatoes and cut them into small cubes. Stew them with 1 tsp salt.
- Mix the peas, the carrots and the potatoes with plant-based mayonnaise sauce.
