Apricot Almond Oatmeal

If you had to pick 5 foods that you could eat on a deserted island from now on, which ones would you choose? I find this question quite difficult to answer. But that oats would be one of my foods is absolutely clear. For years I have been eating oatmeal every day for breakfast and I still love it. When I go on trips or spend one night away, there is always a pack of oats in my backpack. Always. My oatmeal gives me warmth and energy for the day. Meanwhile, I have also infected Prospi… He also eats oatmeal daily. However, his plate looks a little different, because our tastes are not perfectly identical. I’m not a big fan of raisins, Brazil nuts and hazelnuts. Instead, I’m thrilled by the flavor combination of apricot and almond.

Today I show you the recipe of my delicious and nutritious current favorite breakfast. The almond butter ensures a creamy consistency and the molasses provides some sweetness, in addition to the soaked dried fruits.

For my oatmeal, I prefer to use dried mulberries and apricots. Feel free to choose other dried fruits such as raisins, dates or figs.

Cut the apricots into small pieces. Together with the mulberries, soak them overnight or for one hour. This step is optional. But in my opinion the soaking is worth it, as the fruits get soft and their sweetness goes into the water that we’re going to use for the oatmeal.

Now you need the oats. The finer they are, the better.

Cook the soaked fruits together with the soaking water, the oats, some more water and a pinch of salt in a small pot. Stir constantly and let it simmer on medium heat. If you want your oatmeal more liquid, add some more water. Add the almond butter, the molasses, some cinnamon and some cardamom.

APRICOT ALMOND OATMEAL

Preparation time:

Level of difficulty: very easy

Ingredients: 

  • 90 g/3.2 oz oats (gluten-free, if necessary)
  • 3 dried apricots 
  • 1 tbsp dried mulberries
  • 1-2 tbsp almond butter
  • 1 tbsp molasses (more information here)
  • cinnamon, cardamom (both ground)

Directions:

  1. Cut the apricots into small pieces. Optionally you can soak them together with the mulberries overnight or for one hour.
  2. Cook the fruits together with the soaking water, the oats, some more water and a pinch of salt in a small pot, stirring continuously.
  3. Add the almond butter, the molasses, some cinnamon and some cardamom.
